Amadeo is a 4th class municipality in the province of Cavite, Philippines. It is nicknamed the “Coffee capital of the Philippines”. Amadeo is best known for the Pahimis Festival, which showcases the town’s coffee industry. It is usually held on the last weekend of February.

Amadeo Coffee History
The Coffee Industry of Amadeo Long before the Department of Agriculture launched its campaign to plant coffee to curb the constant drain of dollar reserves due to heavy importation of coffee, Amadeo was already engaged in coffee farming.
As early as 1880, Amadeo was producing Arabica, a variety known for its aroma and flavor, in modest scale. Formerly called Kapeng Tagalog, it was intercropped with other produce, supplementing community livelihood. However in 1890, an organism known asâ?Coffee Rustâ?, swept the plantations. Rustlike patches on the leaves spread rapidly from tree to tree until entire coffee plantations appeared burned. Coffee fields were ruined.
PAHIMIS is the Amadeo word for thanksgiving. In the olden times, as a sign of thanksgiving the coffee farmer gave away his last can of harvest, believing that by doing so, luck and abundance will come on the next harvest season.
In keeping with this tradition of thanksgiving, Pahimis is now a coffee festival named after this cultural practice, held annually in Amadeo, Cavite. Among the highlights of the three-day event are the coffee exhibits and performances, farm tours, as well as coffee tasting and giveaways to ensure good luck and street dancing to shout the people’s joy of thanksgiving. Part of the festival as well is the Pahimis Coffee Trade Expo & Amadeo Garden Show.
Amadeo was formerly called Masilaw, a Tagalog word meaning glaring. It used to be a forest with abundant dapdap trees that bore bright red flowers after shedding of leaves. These flowers that crown the trees produce a dazzling glaring light. The locality was originally a barrio of Silang. It was made a town in 1872, and was called Amadeo in honor of Prince Amadeo Fernando Maria of Savoy. The inauguration of the town (May 30) coincided with the birthday of the said prince who was born on May 30, 1845 in Turin, Italy, as the second son of the King of Italy and Spain. It was given the Tagalog name Maypag-ibig (with love) during the Philippine Revolution. Amadeo was recognized as a town for twenty-one years. It was reverted as a district of Silang, however, in 1902. Local leaders including Geronimo Bayot and Primo Villanueva, for the next thirteen years, continued to secure the separation of Amadeo from Silang. It was not until 1915 during the administration of Governor Antero S. Soriano, that Amadeo gained its independence. In recognition of his persevering efforts in behalf of Amadeo, Geronimo Bayot was made the towns first municipal president under the American regime
